Date and Honey Cake

This Date and Honey Cake is a simple one to whip up in the Thermomix when unexpected visitors call to say they’re on the way! You can serve it on its own, or with icing.  My preference is un-iced, spread with butter, yum!

When it comes to baked goods, this is certainly on the healthier side. It uses wholemeal flour and no refined sugar. Sweetness is added in the form of dates and honey – this gives the perfect level of sweet along with a subtle honey flavour.

Simple and so so yummy, this cake is quick to get into the oven and will disappear as soon as it's out!

Ingredients

  • 120 g butter diced (or solid coconut oil) plus a little for greasing the tin
  • 100 g pitted medjool dates
  • 60 g honey
  • 3 eggs
  • 200 g milk
  • 250 g wholemeal spelt flour or wholemeal plain flour
  • 2 tsp baking powder
  • 0.25 tsp bicarbonate of soda
  • pinch salt

Instructions

  • Preheat oven to 160°C. Grease the sides of a 20cm cake tin or a loaf tin with a little butter and line the bottom with baking paper.
  • Place butter, dates and honey in mixer bowl. Blitz 10 seconds/speed 4/MC on. Scrape down bowl.
  • Set butterfly in place on blades. Beat 2 minutes/speed 4/MC on. Scrape down bowl. Remove butterfly.
  • Add all remaining ingredients. Beat 20 seconds/reverse/speed 5/MC on, stopping halfway through to scrape down bowl.
  • Transfer mixture into prepared cake tin. Bake for 35-45 minutes, or until a skewer inserted into the middle comes out clean.

What a great way to use up ingredients I’ve had around for ages but never used!

I turned it into cupcakes and when skewer was clean I took them out but they were a bit dense, so I must have a play with that.

Hi Bec,
Just made this cake using plain flour and cows milk. Turned out perfect and delicious. Next time I might try adding some extra chopped dates at the final stage of mixing just to make it a little chunkier throughout the cake.
