French Onion Soup with Gruyere Cheesies

I took it upon myself to come up with a yummy French Onion Soup recipe for the Thermomix. Mainly because I thought it would be great to offer you all another use for the sherry you purchased to make the Mushroom Stroganoff in Main Meals Made Easy

Not that I doubt you could easily use a bottle up making delicious stroganoff for dinner on a weekly basis, but it’s nice to have options.

This took me a few tries to get just right, but I’m really glad I persisted – I hope you are too.

Ingredients Needed to Make French Onion Soup in the Thermomix

1. Onions

2. Butter

3. Balsamic Vinegar

4. Sherry / fortified wine

5. Tamari

6. Vegetable Stock Paste Concentrate

7. Flour

8. Bay Leaves

9. Thyme

10. Water

Ingredients Needed to Make Gruyere Cheesies

You probably could have guessed this! Just two ingredients for these delicious cheesies…

1. Gruyere Cheese – if you can’t get a hold of this, you can use another type of cheese, like a vintage cheddar, or even regular cheddar.

2. Bread – ciabatta, sourdough, French baguette, regular sandwich bread, anything really!

FAQs

I can’t eat dairy, can I still make this delicious looking soup?

Absolutely. You can skip the cheesies and serve with toast, or just enjoy the soup on it’s own. Swap the butter in the soup for olive oil.

I don’t eat bread, is the soup good without the cheesies?

It sure is. It’s definitely worth making the soup and enjoying without the cheesies if you don’t eat bread.

You can either serve the soup by itself, or top it with cheese and pop it under the grill to melt – make sure you use oven-proof bowls if doing this.

I can’t find sherry! What do I do?

This can be a bit confusing, but if you go into a liquor store and ask for sherry, they generally will know what you’re after.

Fortified wine is what you’re looking for. Technically, the word ‘sherry’ can no longer be used on labels. It can only be labelled as such if it was produced in a specific region of Spain.

I don’t have sherry and don’t want to buy it, what can I use in its place?

Sherry is a wonderful inclusion in my version of this French classic. It’s cheap to buy and lasts a very long time! I recommend you purchase a bottle, but if you’d rather not, you can sub white wine.

Can I use dried thyme instead of fresh?

Sure! I’d recommend around 1/2-1 tsp dried thyme in place of the fresh stuff.

French Onion Soup with Gruyere Cheesies

A classic, well known French recipe with a long cook to combine all the flavours into a delicious soup, complete with cheesy toast!

Ingredients

Gruyere Cheesies (optional, but highly recommended)

  • 200 g Gruyere cheese diced 2cm
  • Sliced bread such as sourdough, ciabatta, French stick

French Onion Soup

  • 1 kg bag brown onions halved
  • 80 g butter (Note 1)
  • 20 g balsamic vinegar
  • water
  • 100 g medium dry sherry
  • 40 g spelt flour or plain flour or gluten free plain flour
  • 50 g tamari or soy sauce
  • 40 g Odds-and-Ends Vegetable Stock Concentrate
  • 2 bay leaves fresh or dried
  • small handful fresh thyme
  • pepper

Instructions

  • Place cheese in mixer bowl. Grate 4 seconds/speed 8/MC on. Transfer to a bowl.
  • Place onions in mixer bowl. Chop 15 seconds/speed 4/MC on, or until all roughly evenly chopped. Scrape down bowl.
  • Add butter. Cook 20 minutes/steaming temperature/speed 2/MC off.
  • Add vinegar and 150g water. Cook 25 minutes/steaming temperature/speed 1/MC off.
  • Add sherry and flour. Cook 4 minutes/100/speed 2/MC off.
  • Add tamari, stock, bay leaves, thyme and pepper, then water to reach the 2L mark inside the bowl. Cook 25 minutes/100/reverse/speed 2/MC on.
  • Meanwhile, make the Gruyere Cheesies. Firstly grill the bread on both sides until golden. Top one side of each slice with cheese and grill until melted and bubbly.
  • Serve soup into bowls. Top each bowl with a cheesie.

Notes

Note 1: Butter adds to the flavour in this, so if you can eat dairy I highly recommend using it. However, olive oil can be used in its place for those that don’t do dairy. It still produces a really delicious French Onion Soup.
Nutritional info given is for one serve of soup and one piece of bread with 1/6 of the cheese. If serving without the Gruyere Cheesies, calories per serve is reduced to 221.

Once the sherry is cooked–all the alcohol evaporates and you have only the flavor. No need to worry.
