Serves 2-4 as a side
1 strip lemon zest
1 small garlic clove
2 spring onions, white part, cut into 5cm lengths
handful of parsley
8 tarragon leaves
200g zucchini, cut into chunks
40g roasted almonds
10g extra virgin olive oil
10g lemon juice
big pinch of salt
cracked pepper to taste
1. Close the lid of mixer bowl. Set blades to speed 8. Through the MC hole, add lemon zest, garlic, spring onions, parsley and tarragon. Leave blades running for 20 seconds, or until you can’t hear anything touching them.
2. Add zucchini, almonds, oil, lemon juice, salt and pepper to the bowl. Chop for 3 seconds/speed 4/MC on. Remove lid and scrape down the sides of the bowl. Replace lid and chop for a further 2 seconds/speed 4/MC on.
