This is fast to make and a good pick me up for a hot afternoon, like the one we are having today here in Perth! It is simple and not overly sweet – this is just how I like it! If you like things sweet, add an extra date.
200g cashew coconut milk (or milk of your choice)
200g ice cubes
1 medjool date
1 heaped tsp cacao powder
1 little dollop of vanilla extract
1 freshly brewed long shot of nespresso coffee (or 1.5-2 tsp instant coffee)
1. Place all ingredients in mixer bowl. Blend for 1 minute/speed 9/MC on.
