This maple roasted pumpkin salad is amazing! It’s definitely on high rotation in this house and I love making it for when we have friends over, as part of a BBQ. I love cooking the pumpkin for a little longer, so it gets those nice crispy charred bits on it! Adds to the flavor. And I store the extra Dukkah in the freezer.

This is such a flavoursome dish which is easy to make. The colours are vibrant and I can guarantee you’ll go back for seconds! This will definitely be a staple salad for me, in all four seasons, not just summer!
