Before each of my new cookbook launches, I ask the Bexta’s in my Facebook group which recipe they would most like me to share the list of ingredients for, so that they can have everything ready to get cooking when they have my latest book in their hands, well on their screens… The people have spoken and this is the recipe that received the most votes for Volume 4, Lunches and Snacks Made Easy. The ingredients come together like magic to make a super tasty pastry encased morsel. I hope you guys love it as much as we do!
These are the ingredients you will need (along with some basic pantry staples):
4 sheets butter puff pastry (or GF puff pastry, or vegan puff pastry – most supermarket brands are actually vegan)
Parmesan cheese (or nutritional yeast)
day-old bread (gluten free bread for GF)
1 x 400g tin lentils
eggs (chia eggs for EF)
sesame seeds, for topping (optional)
