Before each of my new cookbook launches, I ask the Bexta’s in my Facebook group which recipe they would most like me to share the list of ingredients for, so that they can have everything ready to get cooking when they have my latest book in their hands, well on their screens… The people have spoken and it’s my Thermomix Vegetarian Sausage Rolls that received the most votes for Lunches and Snacks Made Easy.

The ingredients come together like magic to make a super tasty pastry encased morsel. I hope you guys love this great little recipe as much as we do!

Oh and if you haven’t already got some in the fridge, I highly recommend you whip up a batch of Tomato Ketchup in advance too. This sauce was one of the first few recipes I created and published here on the blog and to this day it remains one of the most viewed recipes of the site. Many, many people swear by it.

What We Need to Make these Vegetarian Sausage Rolls in the Thermomix

These are the ingredients you will need (plus you’ll need some basic pantry staples):

4 sheets butter puff pastry (or GF puff pastry, or vegan puff pastry – most

supermarket brands are actually vegan)

Parmesan cheese (or nutritional yeast)

day-old bread (gluten free bread for GF)

sweet potato

fresh parsley

tin lentils

eggs (chia eggs for EF)

Almost two years on, this vegetarian sausage roll recipe is still posted about on a regular basis in the Thermobexta Facebook group. It has proven to be an incredibly popular recipe indeed!

I always have some form of these rolls in my freezer at all times. Whether they’re frozen uncooked ready to bake, or they’re all cooked and ready for lunch boxes. My kids love them cold as much as they do hot!

  • eggs variation for egg free
  • sesame seeds for topping (optional)
