We make this dough into Shrek pizzas, the kids love them!
290g water
60g baby spinach leaves
2 tsp yeast
600g unbleached white spelt flour (or 580g bakers flour)
1.5 tsp himalayan salt
30g macadamia oil (or EVOO)
1. Place water and spinach in mixer bowl. Blitz for 10 seconds/speed 8/MC on. Heat for 1.5 minutes/37 degrees/speed 2/MC on.
2. Add remaining ingredients, in the order they are listed. KNEAD/3 minutes/MC on.
3. Transfer dough to a silicon mat or an oiled bowl. Wrap (or cover bowl with a tea towel) and leave in a warm place until the dough doubles in size.
4. Preheat your oven to 200°C and line your oven trays.
5. Unwrap the dough and knock down. Split into 4-5 equal portions, roll out each one and top with toppings of your choice – my Very Veg Sauce is a great pizza sauce!
6. Bake until cheese is melted and pizzas are golden brown.

I loved it, but was a bit too green for my 8yo. They enjoyed the flavour and asked that I gradually increase the level of spinach so they gradually get used to the color! but it’s a great idea.
I was a little concerned my 3.5yr old wouldn’t eat it when the dough looked and smelt like play dough lol but the pizzas cooked beautifully and weren’t as green when cooked. Great way to sneak in extra veges kids loved the hulk pizza. Thanks

Green is my favourite colour. ^_^ I normally find rolling out pizza dough really annoying but this one was much easier, and I love the extra veg! I’ve split my dough into 8 parts to make mini, single serve bases and I’m part-baking them for 10 min at 200ºC, then I’ll freeze them with baking paper in between the layers for easy last minute dinners. Your Very Veg Sauce is up next. 🙂

I haven’t frozen it but I don’t see any reason why it wouldn’t freeze as well as any other pizza dough 🙂
