I originally developed this recipe for meat-free Thermomix tacos a few years ago and it was very popular! Nice and quick and so tasty, it’s a great choice for a fast weeknight meal.
Along with many other recipes here on my blog, as more and more recipes were added and my cookbooks became available, hidden gems like this one got a bit lost.
I thought that bringing some of the buried recipes back to the top of the blog would be a great idea to get you cooking them again.
Thermomix tacos on the table in under 20 minutes! This is such a great meal for busy families and always popular with the little ones. Prepare the other fillings while the tempeh mince cooks and it’s all on the table and ready to eat fast!
To serve, we put all the fillings out on the table and let them fill their own tacos! I love using my Tupperware Serving Centre to hold the fillings. It’s a great use for an otherwise under-utilised item.

What is tempeh?
Tempeh is a nutrient dense product made from fermented legumes, usually soybeans. It is high in protein, fibre and other nutrients.
Where can I purchase tempeh?
Tempeh is widely avaiable in the refrigerated section of many supermarkets and health food stores.
I can’t eat dairy, what can I use in place of cheese and sour cream?
This is still a great meal without the dairy products. You can simply leave them off. If you do want something in replacement, I highly recommend my Cashew Cheeze Sauce in More Main Meals Made Easy.
How else can I use this delicious filling other than Thermomix tacos?
The filling can be used in other ways too. Try wrapping in lettuce leaves, serving on top of corn chips as nachos, on rice, or with eggs for brekkie.

Tex-Mex Vegetarian Tacos
Ingredients
- 100 g brown onion halved
- 2 garlic cloves 10g
- 20 g olive oil
- 250 g vine-ripened tomatoes roughly chopped
- 300 g tempeh roughly chopped
- 60 g Tomato Paste
- 2 Tbsp Bexta's Mexi Mix (20g) (Note 1)
- 10 g tamari
For Serving
- taco shells
- lettuce shredded
- tomato diced
- cheese grated (Note 2)
- sour cream (Note 2)
Instructions
- Place onion, garlic and oil in mixer bowl. Chop 5 seconds/speed 5/MC on. Scrape down bowl, then cook 5 minutes/steaming temperature/speed 1/MC off.
- Add tomatoes and tempeh. Chop 5 seconds/speed 4/MC on. Scrape down bowl.
- Add tomato paste, Mexican seasoning and tamari. Cook 10 minutes/100/speed 1/MC on.
- Pre-heat your taco shells, then stuff with the fillings!
