This coming Friday marks the release of my latest Thermomix cookbook, More Main Meals Made Easy. There is a lot of excitement on the socials and it seems that you guys can’t wait to get cooking from this book! So, like my previous cookbook releases, I ran a quick poll in my Facebook group asking what you guys wanted to make first. The votes are in and it was a very close race, with African Peanut Stew coming in a close second. The winner, however, is this delight: my Quick Coconut Curry, on the table in 30 minutes! The Thermomix makes this vegetarian curry in a hurry.

What You Need for this Thermomix Vegetarian Curry

cumin seeds

ground spices

2 x 270ml tins Ayam coconut milk

tin lentils or chickpeas

From the Fridge/Freezer…

ginger

green chilli

lemon

potatoes

carrots

cauliflower

zucchini

baby spinach

red capsicum

frozen peas

Wow!! This recipe was a game changer for me! I had it at a friends house for a mid week dinner, a full time working house mid week dinner, the most luscious, flavoursome, healthy, vegetarian curry…. from then on, I was hooked!!
