Lime and Coriander Cashew Sauce – also a great dip!

This sauce is life. Seriously. If you’re after a quick condiment to take your meal up a notch or ten, make this. It may look like a simple mix of basic ingredients, but the combination is ahhhmazing. It’s a savoury cashew cream with lots of lime and coriander, producing an exquisite sauce. Not only that, it makes an awesome dip for corn chips or veggie sticks too!

I actually created this recipe while writing my new cookbook, Family Favourites Made Easy. It was designed specifically to give especially the dairy free and vegan people a creamy alternative to accompany the Black Bean Tacos and the Enchiladas in there. However, we couldn’t quite squeeze it in, so I’m sharing it here instead for all to make! Please don’t pass on it if you’re not dairy free, it is SO good. Trust me.

So what do we need to make this luscious cashew sauce?

There are only a handful ingredients in this cashew sauce and the Thermomix makes light of blending it up in to a lovely, smooth texture.

  • Cashews
  • Lime juice
  • Coriander
  • Garlic
  • Salt
  • Water

How it’s done

It’s so simple! First it’s important to soak the cashews, this will give you the creamiest outcome. Not for long, just half an hour in boiling water. After that, we drain the cashews, add everything to the Thermomix bowl and blitz. Done! That’s really all. And you then have this magical flavour-packed sauce. I’ve shared a zoomed in shot of the sauce below with the process shots, as I wanted to show you just how creamy it is!

Creamy Lime and Coriander Cashew Sauce

This creamy, dreamy sauce, is utterly divine!! It pairs well with any Mexican meals, and also great as a dip. It also takes poached eggs up to the next level!

Ingredients

  • 180 g raw cashews + boiling water for soaking
  • 150 g water
  • 30 g lime juice
  • 20 g fresh coriander
  • 1 garlic clove (5g)
  • 1.25 tsp salt

Instructions

  • Place cashews in a bowl. Cover generously with boiling water. Set aside to soak for 30 minutes.
  • Drain cashews and discard soaking water. Place cashews in mixer bowl. Add water, lime juice, coriander, garlic and salt. Blend 2 minutes/speed 9/MC on, stopping if needed to scrape down bowl.

Notes

Serve with Mexican meals – enchiladas, tacos, nachos, quesadillas, etc.
Drizzle over poached eggs, or mashed potato, or steamed veggies.
Use as a salad dressing – particularly good as a potato or pasta salad dressing.

Can I use cashews instead please? I can’t have dairy nor cashews.
