These are a very tasty savoury pikelet! I set out to create a corn fritter batter recipe for the Thermomix and while these didn’t come out how I’d planned, they are a very tasty savoury pikelet that is incredibly popular with my kids (bonus with all that veg!)
They freeze well and are really good for lunch boxes. Simply freeze in a single layer, on a lined tray or plates. When frozen, transfer into a container or big ziplock bag and store until needed.
You can make them without the spinach if your kids are allergic to green!
You can mix and match the ingredients if you like, I’ve even made these with peas instead of the corn and the kids devoured those too.
Update: My Corn Fritter recipe for the Thermomix did end up eventuating and let me tell you, they are exactly what I was wanting! Crunchy and PACKED with corn, much less batter than a pikelet-style corn fritter. If you would like to try them, the recipe can be found here in Super Sides Made Easy.

Spinach and Corn Pikelets
Ingredients
- 200 g milk regular or plant milk
- 60 g baby spinach
- 2 eggs
- 30 g spring onions roughly chopped
- 1 garlic clove
- 1/2 tsp Herbamare or salt
- 1 tsp dulse flakes (optional)
- 280 g corn kernels fresh or frozen
- 120 g spelt flour or plain flour, or gluten free flour
- 1.5 tsp baking powder
- oil for frying
Instructions
- Place milk, spinach, eggs, onions, garlic, Herbamare and dulse into mixer bowl. Blitz 10 seconds/speed 6/MC on.
- Add corn kernels, flour and baking powder. Combine 5 seconds/speed 3/MC on.
- Heat a large frying pan on low heat . Add a little oil. When oil is heated, drop in tablespoons of the batter and cook until brown on both sides.

Delicious! and that was just my taste test. The children will be having them for afternoon tea today.
I made them gluten free and realised I had no dried chickpeas left to mill into flour, so I just did a combo of various gluten free flours I had in the pantry.
Can I leave out the spring onions? Have none and don’t want to go back to the shops!!
